Kelty’s Kafe at Ivy Tech Community College Northeast is now open during the summer semester, and the first summer lunch kicks off next week. Hospitality administration students create the theme and menu of each lunch, preparing and serving the food themselves.
The lunches, served from 11 a.m. to 1 p.m. on Thursdays from June 25 to July 30, will feature a sandwich, a salad, cookie options, cheesecake, a chef’s choice dessert, a cake option, and peach cobbler. Kelty’s Kafe is in Anthony Commons on Coliseum Campus (3800 N. Anthony Blvd.)
The café’s first student chef is Cindy Jackson, a hospitality administration major who is specializing in baking and pastry arts.
“I retired as a LPN in 2004 and decided to teach my learning-challenged grandson to cook,” Jackson says. “I really enjoyed this and thought I could teach other challenged children to be interested in cooking for themselves and others.”
Jackson has created a carnival-themed menu:
- Corn dogs
- Fresh fruit salad
- Individual vanilla cheesecake
- Brownies
- Soft pretzel nuggets with cheese sauce
- Peanut butter cookies
- Chocolate chip cookies
- Peach cobbler
