Ivy Tech Community College–Northeast Hosting Russian Dinner April 4

The Special Cuisines class at Ivy Tech Community College–Northeast invites the community to join its students, faculty and staff for a Russian dinner April 4. Community members will get the opportunity to sample traditional Russian fare while supporting students, as they showcase their culinary talents. Guests will be able to sample from the following items:

A La Carte Menu

Pickle Platter– House pickled tomatoes, mushrooms, onions and asparagus

Ajepsandal– Flavorful eggplant spread served with warm Russian black bread

Potato Pirozhki– Pockets of dough, stuffed with horseradish and potato mash 
(Served with dill and sour cream)

Mushroom and Barley– Hearty soup featuring potatoes and finished with sour cream

Olivier Salad– Potatoes, carrots, apples, walnuts and raisins combined with mayonnaise
and cream dressing accompanied by bib lettuce

Mixed Greens– Artisan lettuce with beets, walnuts, hardboiled egg and carrots
(Served with vinaigrette)

Shashlik– Skewers of bacon wrapped beef with squash, peppers and onions
(Served with turnip, parsnip and potato mash)

Chicken Kiev– Breaded chicken breast filled with a mixture of butter and herbs
(Served with whipped potatoes, roasted cauliflower and red onion marmalade)

Whitefish Filet– Baked with a white wine, dill and mustard sauce
(Served with roasted root vegetables and grilled squash)

Grilled Mushroom– Marinated Portobello
(Served with glazed beets and turnip, parsnip and potato mash)

Blini– Two blinis filled with berries and sweetened sour cream
(Topped with chocolate vodka sauce)

Ptichie Moloko– Thin, white cake topped with thick marshmallow covering and chocolate 

Baked Apple– a whole apple, cored and baked with cinnamon sugar 
(Served with Plombir Silvochnyi—authentic Russian ice cream—and warm caramel sauce)

Dinners are open to the public. Reservations are required. The dinners are served on Ivy Tech’s Coliseum Campus (3800 N. Anthony Blvd.) in the Hospitality Room (enter door 24 on the north side of the building). Cost is $20 per person, cash or check only. Wine is available at an extra cost per glass.

Reservations are taken for times between 5 and 6:30 p.m. and must be made at least 24 hours in advance. Call the Special Cuisines line at 260-480-2002 to make a reservation.
