The Special Cuisines class at Ivy Tech Community College–Northeast invites the community to join its students, faculty and staff for a Mexican/ South American dinner April 19. Community members will get the opportunity to sample traditional fare from Mexico and South America while supporting students, as they showcase their culinary talents. There will be five courses.

Golden Peak Gallo (Golden Pico de Gallo, Salsa Borracha, Salsa Fresca)
Rosemary Pinchos de Camarón (Rosemary Skewered Shrimp)
Taquitas Laminado de Hongos (Rolled Mushroom Taquitas with Roasted Tomatillas and Cilantro Salsa)
Jalapeños Rellenos con Queso Oaxaca (Jalapeno Stuffed with Oaxaca Cheese)
Manchego and Poblano Soup
Cactus Salad with Avocado Dressing
Golden Beet Carpaccio with Gorgonzola and Chile Oil
Guava Stuffed Chicken with Caramelized Mango- Served with Plantain Fried Rice
Pit-Roasted Pork Tacos- Served with Frijole de la olla and Brussels Sprouts in Morilla Cream
Vera Cruz Style Red Snapper- Served with Mexican Rice and Grilled Vegetables in Escabeche
Corn Quesadillas with Fresh Squash-Blossom Filling- Served with Ancho and Pine Nut Rice
Tapioca and Coconut Cake with Pineapple and Rum Flambé
Mint and Mango Ice Cream with a Spicy Ginger Cookie
Cookies with Brown Sugar Syrup
Dinners are open to the public. They are located on Ivy Tech’s Coliseum Campus (3800 N. Anthony Blvd.) in the Hospitality Room (enter door 24 on the north side of the building). Cost is $20 per person, cash or check only.
Reservations are taken for times between 5 and 6:30 p.m. and can be made up until noon the day of the dinner. To make a reservation, call the Special Cuisines line at 260-480-2002. Upon calling the hotline, guests will receive a confirmation number, which they must present upon arrival.
