The Special Cuisines class at Ivy Tech Community College–Northeast invites the community to join its students, faculty and staff for a French dinner April 11. Community members will get the opportunity to sample traditional French fare while supporting students, as they showcase their culinary talents. Guests will be able to sample from the following items:
A La Carte Menu
Appetizers
Olive Topenade– Provençal olive spread on croustades
Spinach and Artichoke Dip– Baked spinach and artichoke dip served with pita chips
Baked Brie– Baked brie in puff pastry served with seasoned crackers
Soup
Shrimp and Lobster Bisque– Herb oil and micro greens
Salads
Coddled Egg Salad– Coddled egg over a bed of mesclun greens served with true French dressing
Stuffed Artichoke Salad– Stuffed artichoke of butterhead lettuce
Entrées
Chicken Roulade– Duxelle chicken mousse stuffed in a chicken breast
served with mashed golden Yukon potatoes and asparagus
Tournedos Rossini– Fillet of beef and foie gras over a glazed crouton
served with creamed cabbage and roasted red skin potatoes
Seared Sea Bass– Sea bass over rice pilaf with julienne peppers and vegetable broth
Ratatouille– Zucchini squash, eggplant, olives, peppers and capers
Desserts
Swan Profiterole– Pastry cream and raspberry coulis
Crème Brulee– Vanilla bean crème brulee
Apple Tarte– Apple tarte with caramel sauce
Dinners are open to the public. Reservations are required. The dinners are served on Ivy Tech’s Coliseum Campus (3800 N. Anthony Blvd.) in the Hospitality Room (enter door 24 on the north side of the building). Cost is $20 per person, cash or check only. Wine is available at an extra cost per glass.
Reservations are taken for times between 5 and 6:30 p.m. and must be made at least 24 hours in advance. Call the Special Cuisines line at 260-480-2002 to make a reservation.
