The Special Cuisines class at Ivy Tech Community College–Northeast invites the community to join its students, faculty and staff for a Middle Eastern buffet Feb. 23. Community members will get the opportunity to sample traditional Middle Eastern fare while supporting students, as they showcase their culinary talents. Guests will be able to sample from the following items:
Buffet Menu
Appetizers
Dolma– Minced lamb with basmati rice, chopped onion
and tomato sauce tightly wrapped in a grape leaf
Lemon Hummus– Chickpeas, garlic, olive oil, tahini,
and lemon juice blended to perfection
Mint and Cucumber Raita– Yogurt, lime juice and mint mixed with cucumber
Falafel– chickpeas, onion, garlic, parsley and spices rolled into a ball and pan fried.
Soup
Lloz Shoba– An Algerian specialty; this almond soup blends onions,
chicken stock, and of course almonds.
Salads
Moroccan Carrot and Orange Salad– This sweet salad includes carrots,
oranges, red onion, cumin, coriander and fresh mint
Tabouli Salad– Cracked wheat, parsley and mint salad,
dressed with lemon juice and olive oil served on a lettuce wedge.
Entrées
Lamb Shawarma– Lamb marinated overnight in yogurt, lemon juice,
vinegar, olive oil and onion then seasoned and stewed.
Octapodi Kokkinisto– Baby octopus grilled and topped with a rich tomato sauce
Chicken and Rice– Chicken fried with onion, garlic, tomato, parsley
and bay leaf served with rice, almonds, and raisins.
Middle Eastern Potato Salad– Red potatoes, garlic, parsley, lemon juice,
olive oil, and Egyptian dukkah spice tossed together.
Kabak Mucveri– Zucchini fritters combining green and
yellow onions, kasseri cheese, eggs and fresh dill.
Tunisian Stuffed Tomatoes– Tomatoes stuffed with onion, rice, pine nuts, raisins, and cinnamon.
Desserts
Turkish Delight– This candy, featured in “The Lion, the Witch, and the Wardrobe,”
was developed in the 1700s and is still a huge hit in Turkey today.
Awamat– These Lebanese doughnut balls are wonderful
in simple syrup – also served with a variety of fruit.
Middle Eastern Kataifi– Pastry with hazelnut, sugar, and cinnamon,
then rolled and baked with honey syrup.
Naan– Indian flat bread that goes great with Hummus and Raita
Dinners are open to the public. They are located on Ivy Tech’s Coliseum Campus (3800 N. Anthony Blvd.) in the Hospitality Room (enter door 24 on the north side of the building). Cost is $20 per person, cash or check only.
