The Special Cuisines class at Ivy Tech Community College–Northeast combines students’ skills and experience to plan, create, and execute menus from regions all over the world in the Special Cuisines dinner series. The class is comprised of culinary students who are rotated through various positions in the kitchen and dining room throughout the semester in order to solidify their knowledge of the foodservice industry prior to graduation.
“People from the community have come to expect authentic and unique cuisines when attending any of our Special Cuisines,” said Hospitality Administration Department Chair Jeff Bunting, CEC.
Dinners are scheduled on Thursday evenings through the spring semester.

The Italian Buffet on February 3 will serve the following:
Appetizers: Vitello Tonnato; Condion; Salumni, Fromaggi, and Giardiniera Antipasto Platter; and Palline D’Alpeggio
Soup: Minestra Di Fagioli E Cardoncelli
Salad: Insalata Con Gorgonzla
Entrée: Coda Di Respo; Pollo Alla Cacciatora; Carne Dei Pastori; and Cannelloni Alla Sorrentina
Side Dish: Cime Di Rape Al Pomodori; Orecchiette Con I Carciofi; and Risi E Bisi
Dessert: Panna Cotta Con Salsa Al Carmello Pralina; Coperature Congelate Del Mandarino Con Il Sorbeto Del Mandarino; Gnocchi Di Susine; and Composta Di Frutta Calda
Beverage: Tea, Fruit Punch, Coffee, and Espresso
Dinners are open to the public. Cost is $20 per person, and reservations are taken for times between 5 and 6:30 p.m. on the evening of each dinner. Call the Special Cuisines line at 260-480-2002 to make a reservation.
