The Special Cuisines class at Ivy Tech Community College–Northeast invites the community to join its students, faculty and staff for a Middle Eastern buffet March 7. Community members will get the opportunity to sample traditional Middle Eastern fare while supporting students, as they showcase their culinary talents. Guests will be able to sample from the following items:
Buffet Menu
Appetizers
Kufteh– Herb meatballs with tomato-plum sauce
Lahmacum– Flat bread with lamb and tomato
Baba Ghannouj– Mashed eggplant with pita chips
Muhammara– Red pepper and walnut dip with pita chips
Soup
Cold Cucumber Yogurt Soup– Smooth cucumber, mint and yogurt soup finished with a mint lemon ice cube
Salads
Shirazi Salad– Cucumber, tomato and red onion in lemon oil dressing
Salata Adas– Garlicky lentil salad
Entrées
Kafta– Lebanese beef kebabs with an array of spices
Kuku Kadoo– Persian zucchini frittata
Chicken Biriyani Spiced with Saigon Cinnamon
Lemon Couscous with Peas and Carrots
Shirin Polow– Iranian rice pilaf
Loubieh Wa Hommus Bi-Ziet– Lebanese-style green beans with chickpeas
Roasted Cauliflower with Tahini Sauce
Desserts
Baklava– Rich, sweet pastry made of layers of filo pastry filled with chopped nuts and sweetened with honey
Siphnopitta– Honey and cheese cake
Ma’Amoul– Nut-filled pastry
Dinners are open to the public. Reservations are required. The dinners are served on Ivy Tech’s Coliseum Campus (3800 N. Anthony Blvd.) in the Hospitality Room (enter door 24 on the north side of the building). Cost is $20 per person, cash or check only. Wine is available at an extra cost per glass.
Reservations are taken for times between 5 and 6:30 p.m. and must be made at least 24 hours in advance. To make a reservation, call the Special Cuisines line at 260-480-2002.
